Lockdown Cooking | Ladi Pav

After several failed attempts, I could finally bake bread at home! It took me almost 20 failed attempts and lots of sour tasted stone balls [ yes, you read that right! All my previous attempts made the bread as hard a thano’s stone! haha ].

Baking requires a lot of patience, and a lot of accuracy. Once you get that patience and accuracy, then baking is as simple as a cakewalk!

Ladi pav is no different from bread, but its the way how it is baked and used. In my previous post, I have baked bread loaf using a pressure cooker and in this recipe, I am going to bake pav in the oven.Check out my amusing journey of baking a Ladi Pav at home 🙂

Serves: 7 buns

What did I use?

  • All purpose flour – 2 1/2 cups or 240 grams
  • Butter – 1 teaspoon [ YES! Just 1 teaspoon ]
  • Dry yeast – 2 teaspoons or 7 grams [ approx ]
  • Sugar – 1 1/2 teaspoon
  • Salt – a pinch
  • Warm milk – 1 cup or 200 ml

How did I make it?

  • First, I activated yeast by taking a small bowl and mixing milk and sugar. Once sugar dissolves, I added yeast and covered it with a lid and kept it at a warm place for the yeast to activate.
  • Once my yeast got activated, I mixed flour and salt and started kneading the flour. Make sure you clean and dry your hands as the dough is going to be extremely sticky. The dough will take about 15 minutes of kneading to get a smooth and soft consistency [ refer the images below ]. After kneading my dough for about 15 minutes, I added butter and kneaded again for about 5 minutes and allowed it to rest at a warm place for 1 hour. The dough MUST be covered with a damp cloth and should be stored at a warm place [ probably near the gas stove or some other place ].
  • After an hour, my dough had doubled! which means, my mission was successful because I could see the dough rising.
  • After an hour, I pinched the dough and kneaded it again for only 5 minutes and then transferred the dough to my greased baking container, to set it for another one hour. To set the pav, I divided the dough into 7 equal pieces and rolled it into a rectangular shape.This helps in getting the shape and also avoids the need to knead before transferring it to the baking container.
  • Cover this dough with a damp cloth and wait for the dough to rise a little more! if you are lucky enough, the dough might again double! depends on how much you knead and what kind of yeast you use 🙂
  • As a pre-preparation, I pre-heated my oven at 200 degrees for about 15 minutes.
  • Next, I placed the baking tray into the oven and baked my bread for about 15 – 17 minutes at 180 degrees.Before inserting my bread, i ensured that i milk-wash on the top so that my bread remains soft and I also get the desired pinkish – brown color.
  • Once my pav was baked, I applied a light coating of butter to get the desired shine and covered it again with a damp cloth. This will allow the pav to cool and will also help the pav in becoming soft!
  • Homemade ladi pav is ready! ❤️
